Another simple and quick dish that goes well as a side to dal and any meal!
It’s just parsnips, about 10 diced into small cubes.
1 onion sliced.
2 green chillies sliced.
1 tsp turmeric.
Salt and pinch of pepper and sugar.
2 to 3 tbsp of Veg Oil.
Heat your oil hot, add all the ingredients. Stir well and cook covered on med stirring occasionally till parsnips are almost cooked and onions opaque and soft.
Uncover, raise heat and fry stirring gently till you get colour and caramelisation.
When you start getting crispy edges and some browning and parsnips cooked through, serve hot!
