Sardine Jhura

Spicy jhura

INGREDIENTS:

2 med onions thinly sliced
2 dried chillies
2 green chillies chopped
5 cloves garlic minced/chopped
Oil
1 tsp salt
3 tomatoes chopped
Handful fresh chopped coriander
1 tbsp tomato puree
2 tins sardines in tomato sauce
2 tbsp curry powder
1 tsp cumin
1 tsp coriander
1 turmeric
1 tsp chilli or more

METHOD:

Heat 4 tbsp oil in pan, add dried chillies and garlic. Cook for about 30 seconds add onions, fresh green chillies and salt.

Cook this till onions softened and no rawness. Now add tomato puree and 2 fresh tomatoes. Cook this well covered till tomatoes softened and broken down and oil is splitting.

Add splash of water, add spices and cook till you get oil splitting again. Keep adding splashes of water so it does not stick.


When the oil splits add your sardines and really break this down.
At this stage you will cook this so its dry-ish and the sardines have melded well and the redness has gone but its sticking slightly and you scrape it off, repeatedly.


Add rest of fresh tomatoes and cook till it looks like in pic.


Add coriander stir and serve.
Serve with rice and a dal.


You can add spinach if you want or green peppers, courgettes, more green slit chillies!
