Sardine Medley

This is a dish that has evolved from a quick lunch of roasted fresh sardines and tomatoes cooked by my brother in Spain during one of our family holidays to what it is now.
I like to think it’s reminiscent of and inspired by sun, sea and family.
It is really scrumptious and cooked at least once a fortnight by either myself, my hubby or my daughter.
It’s a party dish that is great with drinks but substantial as a lovely lunch or part of an evening mezze.

You will need:
5 tins of sardines in tomato sauce.
4 tbsp passata
2 onions thinly sliced
2 red peppers sliced
5 tomatoes sliced
Salt
1 tsp chilli powder
Zest of 1 lemon and juice
1 tbsp chilli flakes
Good milling of black pepper
1.5 tsp salt
3 tbsp olive oil.

Mix all the above ingredients together in a baking dish, breaking up the sardines very well.
Place under a hot grill.
Leave till you get brown toasty top, stir then back in.
Do this repeatedly until most of the sauce has dried somewhat and you have lost the raw taste of all the ingredients but a rich roasted flavour imparting.
Taste for seasoning.
Serve with hot baguettes and lemon wedges for squeezing as per your taste.
We often prep this the day before…
It should take no longer that 30 mins or less under a hot grill with regular checks and turning.
Make sure it singes a little at top each time you stir!

Enjoy with a nice chilled white Sauvignon blanc! I love a nice Malbec myself!
