Ok, we have the wonderful humble prawn again in another recipe which this time uses courgettes. Prawns can be cooked with an array of vegetables and often they can help bulk out a dish.
I’m using these prawns with courgettes as I always have a glut of these to use up during the summer from my garden.
I hope you try the recipe it’s not very complicated but it has a lovely flavour and a sweetness from using the courgettes.
INGREDIENTS:
300g prawns, cleaned
2 bay leaves
2 dried chillies
2 large onions thinly sliced.
5 cloves garlic crushed.
2 tsp of dried Kasturi methi
Salt
2 tbsp tomato passata or pureed thinned with water.
2 fresh tomatoes sliced
2 courgettes sliced
Fresh coriander chopped
1tsp chilli powder
1 tsp turmeric
1 tsp coriander
2 tsp cumin
Veg oil
2 chillies sliced
METHOD:
Heat about 4 tbsp oil in pan.
When hot add dried chillies and bay leaf till chilli darkens a little.
Add the garlic and cook for a few seconds then add onions.
Cook this till onion softens a little.
Add methi leaves and salt, add few tablespoons of water. Stir cover and leave on low till onions soften.
Now add the puree, stir and cook on medium heat till rawness dissipates and the oil splits.
Again add splashes of water and cook till oil splits.
Now add powder spices, stir well for a good few minutes and add 3/4 of your fresh tomatoes as well as coriander stalks. Now cook this till the tomatoes break up and oil splits again.
Here you add courgettes and cook on high as courgettes will release water.
Continue to cook till it’s starting to dry.
Add your prawns and fresh chillies.
Add bit of water depending on how thick you want it. Cook till prawns and courgettes are done.
Few minutes before stir in fresh coriander!
When you see bubbles of oil splitting it usually means spices are cooked through and ready!
Serve with whatever you desire!
