As a child my mum shared with me lots of foods she enjoyed as a child that she had in the village back home.
This is one that I still indulge in and miss her ooh and aah’s while eating it reminicing about her childhood. Bossuri.

Its truly delectable…a by product from making ghee!
Its the sediment that collects…the ghee residue…scrumptious salted caramel flavoured loveliness that attaches to the sides off the pan and settles below.

Umptious brown sandy specks…eaten with rice and just the humble chilli.
It has to be salted butter…just pushed past the dark molten caramel stage…nutty, soft and aromatic.
If you’re a Bengali and you have not tried this…you have not lived.
