INGREDIENTS:
6 small crabs cleaned then mixed with half tsp of chilli powder, salt and turmeric
3 med onions
3 to 4 sliced chillies
3 tsp garlic ginger mince/paste
3 med tomatoes chopped
3 cloves
3 cardamoms opened
2 bay leaves
2 cinnamon sticks
1 tsp salt
2 tsp curry powder
1 tsp cumin powder
1 tsp of chilli powder
1 tsp of degi mirch
Half tsp turmeric powder
Handful of fresh coriander
Half cup oil.
Spices for the curry:
Half tsp tumeric
2 tsp curry powder
1 tsp cumin
1tsp coriander
1 tsp chilli powder
1 tsp degi mich for colour as I am using naga for heat.
Keep cooking this for a good 5 mins
METHOD:
Heat half cup oil
Add 1 tsp of garlic ginger mince
Add the cleaned marinaded crab
Quick fry
Take out and put aside
Keep the bowl to rinse out later
To remaining oil add bay leaf, 3 cloves, 3 cardamom and 2 cinnamon sticks.
Wait till aromatic…
Add onions and 1 tsp salt
Add 2 tsp of garlic and ginger mince. Cook for while.
Add fresh green chillies. I added a naga from my plant. Keep cooking this till it’s softened.
Add quarter cup water…cover and leave it till oil starts splitting.
When oil splits you will notice it collect in middle if you make a well.
Now add 3 med chopped tomatoes.
Cook this covered again till tomatoes broken down.
When oil is splitting you will notice at sides.
Add quarter cup water
Cook again till oil splitting…cover if you want.
Add crab…stir in cook for few minutes
Rince out bowl off crab add water…about good cup
Cook this covered stirring occasionally.
When its splitting oil or its coming to surface
Add handful fresh coriander and give it a good stir.
Take of heat. Ready to serve
I like my sauce quite dry, adhering to the crab but you can adjust and keep it looser if you prefer.
