I love this simple chickpea salad with raw mango! I can gobble bowl fulls specially in the summer, sat in the garden basking in the sun! It’s tangy, yum and filling and is great with your main meal or with fish dishes!
I bet though you’ll be chomping away before it gets to your dinner table!
INGREDIENTS:
1 can drained chickpeas, rinsed.
1 onion finely chopped
1 tomato deseeded and finely chopped
1/2 cup raw sour mango, chopped
1 Green Chilli, finely chopped
1/2 tbsp Red Chilli powder
1/2 tbsp Chaat Masala Powder, optional
1 tbsp veg oil
Salt, as required
2 tbsp Lemon juice
2 tbsp Coriander (Dhania) Leaves, minced
1 tbsp Mint Leaves (Pudina), minced
METHOD:
In a mixing bowl, combine the chana, onions, chopped green chilli, tomatoes, salt, red chilli powder and give the mixture a good stir.
To this add raw mango pieces, chaat masala, lemon juice and toss the salad mix.
Garnish with chopped coriander and mint leaves.
Tuck in and Enjoy! Its a truly yum salad!
