Spring Onions with potatoes
Humble potato elevated with addition of few spices and simple spring onion
Spring Onions add to this highly aromatic and flavourful dish

I love cooking with simple ingredients and there’s nothing simpler than the humble potato which is a staple mainstay in many homes.
This dish to me is really exciting and always welcomed particularly with parathas. I thoroughly enjoy eating this frequently instead of meat or fish when cooked!

I cooked mine quite spicy but adjust the heat/chilli to your own taste…

It gets finished in In no time in my home!

INGREDIENTS:

10 spring onions
3 tablespoons of oil
1 teaspoon Cumin seeds
2 garlic cloves minced                              1 large tomato chopped
2 potatoes cut into small squares
salt to taste
1 tsp red chili powder
½ tsp turmeric
1 ½ tsp coriander powder
Red chili flakes                                           2 dried red chilles torn up

METHOD:

Prepare the spring onions thoroughly by cutting in half. Chop the top greens and keep them separate and then keep the white lower half separate.

Heat 3 tablespoons of oil in a frying pan and add the cumin seeds. When they sizzle add the torn dried red chillies and your garlic. Gently fry these for a few mins till golden brown.

Now add your diced potatoes, salt and stir for further few minutes.

Add quarter cup water and cook for 6 to 7 minutes so that they are half cooked but not browned.

When half cooked, at this stage add the tomatoes, mix and then all your powdered spices.

Cook through

Mix well and cook covered again till the tomatoes are soft.

Next add the white spring onion and stir mixing in very well.

Now cook covered for 5 minutes till tomato is drying and your potatoes are nearly cooked.

Stir in the chilli flakes.
Now cook further covered till potato is completely cooked through.

When they are done add the green spring onions.

Green onion goes in

Then after 3 mins dish up.

Serve with Paratha or bhatura!

Ready to serve!
