Spiced Fried Rice With Mackerel And Red Curry Paste

Mackerel Rice


2 tablespoon vegetable oil
2 eggs lightly beaten
1 pinch caster sugar
3 tablespoon red curry paste
800g cooked long grain rice
small bunch of spring onions sliced
140 g of frozen peas
2 green chillies chopped
2 tablespoons of soy sauce
2 smoked mackerel fillets broken up

Heat the oil in a pan, add in your eggs and swirl to coat the bottom of the pan and cook this for a minute. Remove the egg and chop into ribbons.

Add your curry paste to the pan and the sugar, fry for a minute.

Next add in your rice and stir and cook it in the paste for a further couple of minutes.

Now add the peas and soy sauce then stir fry for another 2 to 3 minutes until heated through. Next add the spring onions, green chillies and toss through with the ribbons and mackeral.



You can use prawns, chicken, tofu or any other proteins you have to enjoy in this rice dish!
