Thai Fried Rice Using Red Curry Paste

Quick vegetarian fried rice

There isn’t much to say about this recipe other then how quick, simple and easy it is to rustle up from start finish!

It’s taken me literally 15 minutes to cook so long as you have pre cooked rice, some peas or sweet corn which I didn’t have but would have put in otherwise!

This is amazing if want to use up leftover thai curry paste and in my case I have some red thai curry paste left over in the fridge. As for rice, well there is nearly always cooked rice in my house!

This dish always comes together with whatever you can throw in to it! I always have a bit of a rummage in my fridge to see what there is that needs using up.

It’s an utterly banging fried rice and trust me if you could smell the aromas coming out of my kitchen, my goodness, it’s like your could be in a street serving up food in Thailand!

I rustled this up in order for it to accompany some spicy grilled chicken I had in the fridge. No better way to enjoy lunch.

So for the ingredients! There are no measured ingredients here! Its freefall! Whatever you fancy or have, in balance!

4 tbsp left over red curry paste
Frozen peas
Oil                                                             
2 eggs                                                   
Left over rice heated
Some seasoning i.e. Salt, chilli flakes, pepper and soy sauce if you would like.

For garnish:

Fresh coriander,
spring onion
fresh chillies

So lets start cooking:

Heat a little bit of oil in a frying pan or wok and heat this up. Add your curry paste I added about 4 tablespoons and then cover your fine pan as you’ll get some spitting.

Once the spitting has stopped remove the lid and give it to stir. Now add your peas, sweet corn or whatever vegetables you wish to use.

Give this a good stir, cover and let it cook.

When your vegetables are cooked add in your rice and stir this in well.
If you heat your rice up you will find that this helps speed up the process.

Soon as the rice is nicely coated with the paste, make a well in the middle of your pan. Crack 2 eggs into the well.

Season the eggs with salt, chilli flakes and pepper.

Once you have done that scramble the eggs keeping them in the centre till set.

At this point bringing the rice in from the sides and mix well.

Stir fry this for just a couple of minutes and then take off the heat.

Now sprinkle with some fresh coriander, spring onions and fresh chilli.
Add a few drops of soy sauce if you want.

Give it a quick stir, a quick taste and if you’re happy you’re ready to serve!

TIPS:

Try it with Prawns chucked in with veg or left over chicken!
Its just simply delicious!
