



I was experimenting today. How to utilise a 2 day old left over baguette. Hard and crisped. I know it makes a superb bread and butter pudding so I thought I’d try something different.
This baked dish was delicious! Definitely how any stale baguette will be used in the future or dated bread for that matter.
Simple larder ingredients become a fab brunch/lunch…!
Hubby came in from work and tucked in! Got a resounding yes!
Do give it a go!
INGREDIENTS:
1 bell pepper
1 tomato
3 green chillies
2 tbsp chilli flakes
1 tsp salt
6 eggs
1/2 cup fresh coriander chopped
Quarter baguette
2 tbsp oil
METHOD;
Break up your baguette into a baking dish.

Beat 6 eggs in a bowl.

Finely mince all the other fresh ingredients and add these to the eggs.

Add the chilli flakes, pepper and salt.
Stir well.

Whisk this up so its all well mixed. Add a drizzle of oil to the eggs.


Pour over the broken baguettes. Mix this up well.


Let this stand for an hour as the baguette soaks up the egg and softens.


Drizzle the oil over the mix and mix this in too.
Bake in the middle of the oven at 200 deg untill its all set and knife runs clear. Remove from the oven.


Let it stand for a few minutes then serve!
