

Snooping for sustenance. Find some leftover rice, some smoked salmon that needs using up but can’t cook as shoulder giving me jip.
Thought a cheats microwave style kedgeree without lentils. If you’re not feeling as lazy as me do add tinned lentils if you prefer!
Perfect Brunch when under the weather!
2 Eggs on the boil.
In a bowl added:
Half cup fried crispy shop bought onions.
Quarter cup water
1 tbsp oil
Half tsp turmeric
1 tsp curry powder
1 tsp chilli powder to taste
1 tsp chilli flakes
Half tsp pepper


Zapped in microwave covered for 1min
Stirred then another 30 secs.

Stirred in 2 cups of leftover cooked rice.
Mixed well.
Back in microwave covered for 2 mins. Then stand for a minute.

Shell and cut your eggs in wedges, and tear up salmon.
Stir your rice. Adjust for seasoning.
Add salmon, stir in.
Plate up. Dress with eggs.
Voila!


Cheats Kedgeree! No cooker. 6 mins.
Served. Who needs lentils?
