Creamy Bulgar Wheat Salad

A rainbow salad
Fine Bulgar wheat
Zingy, tangy, crispy deliciousness!

This summer salad is serious business. Its everything I think a complete salad should be. Its everything that makes my taste buds sing!

I used hell fire salt in mine! A seriously hot salt peppered with extremely hot peppers high on the scoville scales!

I also added some Allepo chilli flakes for that sweet smokey wonderfulness that just lifts this salad to another level. Neither are essential but if you can get them they will give you immense pleasure in many more dishes! Approx 250g fine bulgar wheat
1 cup flat leaf parsley, leaves picked and chopped
1 cup fresh coriander leaves, chopped
1 cucumber, quartered and sliced
1 red onion thinly sliced
1 tomato sliced
3 green chillies chopped
1 ripe avocado chopped
1 pickled beetroot chopped
Half tsp coarse black pepper
Half tsp salt
2 tsp of chilli oil
Juice of half a lemon


Fresh ingredients

Prepare all the above fresh ingredients and gently fold together. Place in refrigerator to chill whilst the Bulgar wheat cooks.

Bring a pan of water to the boil and add in the bulgur wheat. Simmer for 10 to 15 minutes on a low heat, then drain and let cool.

Once the Bulgar wheat has cooled, add all the above chilled ingredients and gently fold and mix in. Add the seasoning then let it sit for a few minutes.
