


Looking for a quick I dish to go with your menu? Flat bean and potato fry /Aloo shim bhaji!
This is a brilliant vegetarian side using potatoes and flat beans. Other than the prep it’s the usual simple bhaji style dish popular in Bengali households.
The ingredients are always extremely limited with very little cook time. Flat beans are very popular with Bengalis we find ways to cook them in pretty much every style of curry. Bring the budget always let’s primary ingredient shine. This allows you to savour the flavour and taste of the flat beans and if there fresh all the better.
INGREDIENTS:
Approximately 20 flat beans/hyacinth beans cut into cm strips
1 large potato, cut into thin strips like beans
2 cloves garlic minced
2 fresh chilies chopped
1 onion sliced
Salt to taste
1 teaspoon sugar
3 tablespoons oil
1 teaspoon turmeric
METHOD:
Heat the oil in a nonstick frying pan, add all the ingredients, the fresh vegetables, spices, garlic, salt and sugar in the turmeric.



Stir all ingredients until everything is well coated with the turmeric and seasoning.

Cover with a lid and cook on a very low heat until the potatoes are cooked through.

Uncover and raise the heat to medium and gently fold and fry until the onions, potatoes and beans start to brown a little.

When you start to get the slightly nutty aroma from the gentle browning process your badge is ready to serve.

Enjoy with some plain rice or as a side to accompany dal.
