




I can’t tell you how moorish these are!
Crispy roasted Okra! Proper Crispy!
They make such a welcome addition with drinks and the heat is optional!
You can throw these in an airfryer and done in 15mins but as not everyone has one the oven is fine too!
Just turn over and keep eye on them.
I can eat a whole bowl of these. Just like crisps!
Works great with cauliflower, onion rings, beans and fennel!
Roast and serve straight away.
I don’t think you should take my word for it. I reckon you should see for yourself!
INGREDIENTS:
1 tsp cumin
3 tbsp cornflour
1 tsp coriander
1/2 tsp chilli
1 tsp curry powder
1/2 tsp salt
2 tbsp besan
1/2 tsp chilli flakes
1 tsp chat masala
3 tbsp water or as required
1 tsp garlic paste
METHOD:
Heat the oven on 180 deg or gas mark 4
Wash your okra whole and dry with kitchen towel.
Top and tail then cut in half lengthways.



Combine all the dry ingredients in a bowl.
Add the oil and lemon juice.




Combine with little water to make a thick batter that coats and clings to your finger when you put it in the batter.

Now add the garlic paste. Mix in well.


Add the okra and using your hands mix well so that the batter fully covers and coats all of the okra. Push it in along the cut side.





Now place them in a single layer on a baking sheet. Spray with oil and roast. Cook in middle of oven. Do not turn untill the top has crisped up.




Next turn over, spray with oil and bake on other side till crispy.
If they colour quickly reduce heat and bake just to dry them out slowly.


If your using an airfryer then place the okra in the basket and cook till crisp. Shake basket frequently.
I use my Ninja on fast fry for about 15mins shaking often.


When they are crisp all over, place on a dish preferably in single layer. Sprinkle with salt and serve straight away!
