A simple but tasty way of enjoying fish! Any fish. Fry, grill, bake or roast! I stuck it in an airfryer!
Spiced Airfried Trout
Potato wedges parboiled and airfried
Fennel bulb, green beans and onion in a cream sauce
Mustard greens in butter as bed for trout
Descale, Clean, and pat dry the fish. Score the fish to allow spices to penetrate.
In a bowl add the fish.
Sprinkle half tsp of turmeric, dried chilli flakes, 2 tbsp of veg oil, half tsp of salt and chilli powder.
Mix it in and rub it well into the fish.
Leave to marinate for about 15 mins.
Either shallow fry gently on both sides on med, grill or bake. I either grill or do it in the airfryer.
Slice thickly and par boil till just on cusp of tender.
Sprinkle with salt, pepper and chilli flakes.
Again gently fry, roast or stick in airfryer.
Fennel in cream sauce
1 Fennel bulb thick sliced
Handful green beans cut in half
1 onion thick sliced
2 green chillies sliced
1 chicken stock cube
I pot of cream
4 cloves of garlic sliced.
Fry all the veg, garlic with salt and pepper.
When almost tender and gently coloured, do not brown add the stock cube, cream and a little water. Lower heat and simmer till the sauce thickens and veg is tender cooked through. Adjust seasoning to your taste. The veg is best al dente.
Wash and slice, keep tender young stems separate, discard the stringy stems.
Add a little butter in a non stick pan. Add 1 slit green chilli. When melted add the mustard green stems, pinch of salt and stir. Reduce heat to very low, cover and stew gently till tender. Add the leaves and cook till wilted and soft and you can smell its mellow in aroma.
Assemble on plate and serve!
