I love mine with flourish of parmesan or crumbled feta cheese

Herby oil dip

There is no better way to enjoy homemade bread than with a yummy herby oil to dip and soak your bread in!

This recipe is so delicious when served with crusty artisan bread. Your family and friends will love it!

Its extra virgin olive oil, dressed with oregano, basil, chilli flakes, seasoning and infused with garlic. The final flourish is with parmesan and fresh parsley.
If you want to push the boat out garnish with olives or feta!
Add your fresh crusty bread and you have a great way to savour your efforts!

Serve on a plate or large shallow bowl, use your bread to scoop up some of the delicious herbs as you dive in and enjoy!


1/2 cup Extra Virgin Olive Oil
1 teaspoon dried oregano
2 green chillies finely minced
1 teaspoon dried basil leaves
1 teaspoon red pepper flakes
1 teaspoon salt
2 cloves or 1 teaspoon minced garlic Saute it in a pan in a small amount of oil just until it becomes fragrant. This will really add the best flavour!
Fresh Parsley for garnish
Freshly grated Parmesan for garnish

Olives optional
Feta chunks optional
Artisan bread


Saute garlic in a little plain oil.

Add all ingredients together. Garnish with fresh Parmesan cheese, parsley and delicious green and greek olives.

Best served with french bread, country loaf or artisan bread!


If you can’t be bothered with frying the garlic, place the cloves in their skins in the microwave and blast for 40 secs. Let it cool and mash into paste with pinch of salt. It’s better than raw garlic!
